This may seem obvious, but it is no longer always the case. Soil must remain alive: the minerals that nourish plants come from the breakdown of organic matter by soil organisms and micro-organisms. That's why we work each soil without upsetting the existing ecosystem. Some plots require ploughing with a horse.
We're lucky enough to have vines with hedges or on the edge of forests; we're thinking about planting certain tree species around the vines... to protect each ecosystem: " the more 'people' there are in it - plants and animals - the richer the environment and therefore the more beneficial it is for the vines"
Some soils do not tolerate competition. We have to adapt our cultivation methods accordingly: plant cover, shallow ploughing, eliminating weeds, clawing, digging, spraying, etc. Each action is carefully thought out and measured. We are the key to balance. This enables us to achieve a fine balance in each of our wines. That's how we think we fully convey the subtlety of each terroir!
